Obituary: Domingo Palacio Sipin, 5, 1927 \ 19, 2014 Daddy, Dom, Ingo, Selmo, Inic, Chief, Senior Chief, Grandpa and Great Grandpa ... these are all terms of endearment that have lasted long after any official title he held. So many people loved him. A family member described him as an exquisite man because he was. He was born in Santiago, Ilocos Sur, Philippines. As a young teenager, Domingo endured World War II, the invasion of the Philippines, where so many loved ones were lost. Escaping to the mountains, he became a Bolo man, keeping a watch and warning the Americans of impending activity and attacks. He then joined the U.S. Navy and with an illustrious career of 30 years, he provided well for his family as well as supporting the many submarine commands and headquarters. A favorite chef and manager of Vice Admiral Patrick J. Hannifin of the Joint Chiefs of Staff, Domingos career was carefully guided with premium tours of duty. his 30-year stint in the Navy, he continued on to what he did best-Chef. He started as a chef, then master chef, then partner with the Makepeace family in the very popular Cocoa Beach eating establishment-Gatsbys. He was a prime factor for lines of customers wrapping around the building, night after night. His greatest career in life was that of Father to five girls and one boy. With his beautiful and devoted soul mate and wife of 62 years, Paulina, they travelled life together, being active in their church, Holy Name of Jesus Catholic Church in Indialantic, Florida, enjoying garage sales, managing their farm, seeing the world and in their later years, enjoying family-the added nine grandchildren and seven great grandchildren. Here in spirit, is his only son, Dominic, who we all miss so very much. Dominic is never far from Domingo and Paulinas thoughts. Domingo will be buried next to their beloved son at Florida Memorial Gardens. We borrow from the movie, Serendipity: The Greeks didn write obituaries. only asked one question after a man died: Did he have passion? Domingo Palacio Sipin personified passion. This exquisite man was full of life and laughter and he leaves a legacy for all of us to do the same. He is survived by his wife, Paulina Escalona Sipin, his five daughters, Jovita Olive, Maria Carter, Dolores Watson, Bernadette Piccolella and Donna Gutierrez, his nine grandchildren, David Randall, Angela Randall, Nicole Carter, Dominic Carter, Alanna Irons, Frank Piccolella, Brianna Piccolella, Arianna Tyler and Chloe Tyler, and his seven great grandchildren Paris Bishop, Marley Randall, Mia Randall, Kiya Randall, McKenzie Carter, Makayla Irons and Ava Stewart. He has been a resident of Brevard since 1976. Visitation will be held on , 26 at 6:00pm to 8:00pm at Florida Memorial Gardens, 5950 US 1 in Melbourne, Florida. Mass will be held , 8:30am on 27, at Holy Name of Jesus Catholic Church, 3050 North Highway A1A, Indialantic, Florida. Burial and reception will follow immediately after at Florida Memorial Gardens.
